Set the Table

Make a Feast
It’s no secret that the combination of scallops and bacon is an amazing thing. Try this easy recipe that incorporates breadcrumbs and white wine. Recipe courtesy of Canelle et Vanille. The perfect way to honor the ocean.
Roasted Scallops with Breadcrumbs and Bacon
makes 4 servings
12 scallops
1/4 cup seasoned breadcrumbs
2 tbsp. fresh parsley, chopped
2 garlic cloves, grated or finely minced
3 tbsp. olive oil
4 slices of bacon, finely chopped
pinch salt
pinch of freshly ground pepper
1 tsp red pepper flakes, optional
2 tbsp. white wine
Preheat oven to 425 degrees Fahrenheit. In a bowl, combine the breadcrumbs, parsley, garlic, bacon and olive oil. Salt and pepper the scallops. Drizzle some olive oil on a baking dish and place the scallops on it. Top with the breadcrumbs mixture and drizzle some more olive oil on top. Pour the white wine in the baking dish to add a dash of acidity (alcohol will cook off in the oven).
Cook time will vary depending on the size of your scallops. Once complete, this dish is a beautiful homage to the gifts the ocean has to offer.
